These easy baked spring rolls are a fun activity for KS1 and KS2 children to get involved in celebrating and learning about Chinese New Year as well as getting the opportunity to taste new flavours and foods and learn about healthy eating.
To Make 8 Chinese Spring Rolls You Will Need:
- About 600g of mixed chopped/ shredded vegetables (e.g. beansprouts, shitake mushrooms, pepper, cabbage, spring onion) or a pack of ready chopped stir fry mix
- A pack of filo pastry sheets (8 sheets)
- 1 tsp Chinese five spice powder
- 1 tsp ready to use crushed garlic
- 1 tsp ready to use crushed/ grated ginger
- Splash of soy sauce
- Milk or beaten egg
- Sesame seeds for sprinkling (optional)
- Sweet chilli dipping sauce to serve (optional)

- Knives, forks and spoons

- cups and pastry brush for milk or egg
- Polycarbonate plates and bowls for dipping sauce to serve
1. Place chopped vegetables into a bowl. Depending on ages children may be able to chop the vegetables themselves. Softer vegetables like shitake mushrooms can easily be chopped with blunt knives. For a quicker activity ready bought stirfry mixes are ideal. Children can choose also choose which vegetables they would like to include from a selection.
2. Add flavourings including Chinese five spice, garlic, ginger and soy sauce and mix.
3. Take a sheet of filo pasty and lay on a chopping board. Place some vegetables at one end of the pastry in a sausage shape. Begin rolling the pastry around the vegetables folding in the excess pastry at each end as you go. Be carefully not to let the filling split or break the pastry. If it does keep going as it will be covered as you continue to roll.
4. Brush the end of the pastry before rolling the final bit to stick the roll together and then place on a baking tray and brush each spring roll with more milk or beaten egg. You can also finish them with a sprinkling of sesame seeds before baking in the oven at for 20-25 mins until crispy and golden.
Top tip: make a map of the baking tray to show which spring roll belongs to which child.
5. Allow the rolls to cool a little before serving with sweet chilli dipping sauce.
- Use the opportunity to introduce a range of different vegetable and discuss their importance in a healthy diet.
- Divide children into groups to design their own spring roll recipes using different vegetables and amounts of flavourings. Spring rolls can be cut into pieces to access for taste, texture and appearance.
- Using the basic recipe, children can multiply quantities for a larger number of spring rolls.
